My day on a plate: Hayden James

Musician Hayden James, whose debut album Between Us is out now, shares his day on a plate.

9am Having flown into New York from Sydney the previous night, I head to SoHo for breakfast at Sadelles. I opt for 150 grams of smoked Scottish salmon, tomatoes, pickles and capers on a bagel.

10.30am I have a day of radio interviews and meetings around Manhattan, so I stay hydrated with water at every stop, along with a mint or two.

2pm I have shishito peppers and a kale salad with soft-boiled egg and chicken breast. I accompany this with some water.

3.30pm More water and a small packet of chips.

8pm I head to Bocce restaurant, where I share a meal with friends that includes various salads, salt and pepper calamari, a couple of wood-fired pizzas and an Aperol spritz.

Top marks for… Choosing plain water to stay hydrated throughout the day. It is much better to get our kilojoules from food and have water as our main drink. Your lunch also has a lovely balance of plant foods and protein-rich animal foods.

If you keep eating like this you’ll… Increase your risk of gut problems and lack the benefits of a microbiome with good diversity because your intake of fibre, especially fermentable fibres, is low. It can be hard when travelling, but seeking out higher-fibre options would be a good move.

Why don’t you try… Looking for rye bread to go with your smoked salmon rather than having a bagel, which is made with white flour. A bag of nuts from your hotel room would be better than the chips. Opt for plenty of vegetable toppings on your pizza and always order an accompanying salad.
